As your description, the maximum output current capability of the power bank is not enough to support your application and it is hard to use boost and buck module to improve it.
It is recommended that you can try to use a power bank with continuous 3A current output.

If you want the product do not clear data automatically when it power on again, you should not connect a load to the product, then the capacity will not be clear and you can use the button to check the previous test results.
But if you connect a load to the product, the capacity will be cleared.

The gauge of the wire can be 1.2-1.5 square.
However, as your description, the power and the input voltage to the three meters may be over there working range of the meters.
Please try to use normal gauge wire to test it and if the meter is ok in short time, then see the power and other measured value display on the meters if it is over the measuring range of the meters and decide use which gauge of the wire.
If it is over the measuring range, it will make the meters burn.

We are not sure what you would like to apply the meter to text in your application, the output of your solar panel or the charging condition of the battery?
Could you please tell us where you would like to text?
You can also send us an image of the diagram of your application you plan to, so that we can check it if it can work.
And there is also a wiring diagram in Wiring diagram in the backside of the meter for reference.
